Sweet potato sticks with crunch

The sweet potato sticks are quick to make and really tasty. Preparation time approx. 30 minutes. Thin sweet potatoes are also perfect because the skin stays on.


Ingredients:

- Sönke's sweet potatoes (e.g. in purple, white and orange)

- Olive oil

- some salt and pepper

- finely grated Parmesan (Grana Padano)

- Spices as desired (we like to use the sweet potato spice from Ankerkraut)


1. Preheat the oven to 220 degrees. If possible, use the crisp function.


2. Wash the sweet potatoes thoroughly and then cut the sweet potatoes, with the skin on, into long sticks on a chopping board, into strips of around 0.5 - 1cm thick. To do this, first halve the sweet potato lengthways. Then halve again lengthways and cut long strips from these quarters. Depending on the thickness of the sweet potatoes, cut the sticks into strips again if they are still too thick.


3. Mix the sweet potato sticks with olive oil in a bowl. The sticks should be well coated, but not floating in the fat. Therefore, add the oil carefully.


4. Spread the Parmesan on a flat plate and gradually turn the sticks in the Parmesan until all sides are well coated with a thin layer of Parmesan.


5. Spread the sticks on a baking tray lined with baking paper. Important: The sweet potato sticks should not overlap but should be placed individually on the tray with some space between them so that they can bake until crispy. Now sprinkle the sticks with pepper (and other spices if necessary). The parmesan gives a nice flavor and a salty note.


6. Now bake the sweet potato sticks in the oven for about 15 minutes - when they look brown and crispy, take them out. The time varies slightly depending on the thickness of the sticks.


A delicious accompaniment is a fresh dip made from Greek yoghurt, crème fraîche, lime juice and zest, garlic and harissa spice.
