Ingredients for 2-3 people:
- 500g organic sweet potatoes from Sönke
- 2 eggs
- 50g flour
- Spices depending on use (sweet or savory)
- Oil for frying
Grate the sweet potato (preferably with a food processor) to the desired thickness. If the sweet potatoes are very wet, press out the moisture using a tea towel
(Caution: it turns slightly orange). Add eggs and flour, mix and knead the mixture with your hands. Place the dough in the pan, press firmly and fry until golden brown. Turn occasionally.
Tip:
The Rösti can be eaten both sweet and savory, simply season with appropriate spices.
